3-Bean Vegan Chilli
I have a delicious recipe for you all.
Ingredients:
2 cups of organic vegetable broth
1 chopped onion
1 can unsalted diced tomatoes
A few chopped mini bell peppers
2 cups of peeled and cut butternut squash
2 tsp cumin
2 tsp chilli powder
sprinkle of salt
green onions for topping
15oz can of garbonzo beans
15oz can of black beans
15oz can of pinto beans
Directions:
Drizzle crockpot with olive oil. Stove should be on medium-high heat; add onions and peppers and cook for 7-10 minutes. Then add tomatoes, squash, broth, seasonings and cook for 20 minutes at low heat. Then add beans and continue to cook at low heat for 20 more minutes. Add green onion to top off your soup.
